Thai Turkey Salad


Plain Non-Fat Yogurt 1 ¾ tsp.
Peanut Butter 1 tsp.
Brown Sugar, packed ¾ tsp.
Soy Sauce ¼ tsp.
Ground Ginger Pinch
Hot Sauce Dash
Mixed Greens, chilled 1 cup
Oven Roasted Turkey, strips 4 oz.
Mango, peeled, 1/2" cubes ¼ cup
Red Pepper, seeded, chopped 1/8 cup
Green Onion, sliced 1 Tbsp.
Peanuts, chopped 1 ¾ tsp.


  1. In a microwave-safe bowl, combine yogurt, peanut butter, brown sugar, soy sauce and hot.
  2. Loosely cover with plastic wrap and microwave 60-90 seconds, until brown sugar has dissolved; allow to cool while preparing salad.
  3. Combine chilled salad greens, turkey, mango, peppers and onion.
  4. To serve, combine salad and dressing, toss to coat and top with peanuts.
